Why am I sharing a Boston Cream Pie Recipe? Because, today we’re celebrating
National Boston Cream Pie Day!

Boston Cream Pie is a chocolate frosted, custard filled cake.

Boston Cream Pie is actually a cake. 
In 1996, Massachusetts declared the Boston Cream Pie as their official dessert. 

Here’s an easy recipe using pudding, a cake mix, and a simple glaze.

Boston Cream Poke Cake

Ingredients
• 1 box yellow cake mix plus eggs, oil and water
• 4 cups milk
• 2 (3.4 ounces each) boxes of French vanilla pudding
• 4 tablespoons butter
• 2 ounces unsweetened chocolate, chopped
• 2 cups sifted powdered sugar
• 1/4 cup boiling water
• 1 teaspoon vanilla extract
Instructions
1. Bake the cake as directed in a 13×9 inch pan. Let cool, then poke holes in the cake with the handle of a wooden spoon.
2. Combine one box of pudding mix and 2 cups of milk in a large mixing bowl (preferably one with a spout). Using a handheld electric mixer, beat just until smooth – -about a minute. Pudding should still be thin and runny. Pour the pudding into the holes.
3. Put the cake in the refrigerator and chill for about an hour. Make the second batch of pudding and repeat, fill the holes until the pudding comes to the top, but don’t spread remaining pudding over the top of the cake.
4. Topping: In a large saucepan, melt the butter. Add chocolate and stir over low heat until chocolate is melted. Cool, then beat in sugar, boiling water, and vanilla. Pour over the cold cake. Chill, serve and enjoy!
