  1. In a large mixing bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy.
  2. Add the molasses and spices (cinnamon, ginger, cloves, and nutmeg) to the butter-sugar mixture. Mix until all the ingredients are well combined.
  3. In a separate bowl, whisk together the all-purpose flour and baking soda.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. If the dough is too sticky, you can add a little more flour.
  5. Divide the dough into two portions, shape each into a disk, wrap them in plastic wrap, and chill in the refrigerator for at least 1 hour.
  6. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Roll out one of the chilled dough portions on a floured surface to your desired thickness (typically about 1/4 inch). Use gingerbread-shaped cookie cutters to cut out your cookies.
  8. Place the cut-out cookies on the prepared baking sheets, leaving a little space between each one.
  9. Bake the cookies in the preheated oven for 8-10 minutes, or until the edges are just slightly golden.
  10. Remove the cookies from the oven and let them cool on a wire rack.
  11. Once the cookies are completely cooled, decorate them with royal icing in your desired festive designs.
