Today I’m sharing the recipe for Cream of Broccoli soup, one of my family’s favorite winter soups. You’ll love how easy it is!

You’ll need:

2 tablespoons butter
2 10 oz. frozen chopped broccoli (thawed)
1 onion
1 ½ cups water
1 approximately 10 oz. can creamy potato soup
1 ½ cups half and half (I use low-fat)
Melt butter in a large saucepan over medium heat. Add chopped onion and saute until tender. Add water to saucepan and bring to boil, then add broccoli and reduce heat. Stir in the other ingredients and simmer until broccoli is tender. Transfer 1 1/2 cups of soup to blender and puree until smooth. Add salt, pepper, and nutmeg to taste.

  1. I chicken soup and beef stew for my family. Lots of veggies and herbs. Yummy during the winter!

  2. I make Taco Soup:
    Brown about 3lbs. hamburger
    2 cans corn
    2 cans kidney beans ( or bean of choice)
    2 cans diced tomatoes
    Chopped onions
    1 medium sized jar of salsa
    Let this all cook on Low heat a couple of hours
    Serve with shredded cheese on top
    Add a spoon of Sour cream if desired

    This makes a great big pot of soup
    Serve with tortillas

  4. Stuffed Pepper Soup

    2 pounds ground beef
    2 quarts water or more
    1 can (28 ounces) tomato sauce
    1 can (28 ounces) diced tomatoes, undrained
    2 cups chopped green peppers – add as much peppers as you like. Usually about 4 big ones.
    1/4 cup packed brown sugar
    Salt to taste
    4 beef bouillon cubes dissolved in hot water before adding
    1 teaspoon pepper
    Cook the hamburger, drain…add the other ingredients…simmer until peppers are soft with lid on. Takes about 45 min. or until you can’t stand the smell.
    Some recipes say to add the rice to the soup at this point, but we found it becomes sort of gluey so we add a bit of rice to the cup or bowl just before serving. Makes it easier to heat up later too.
    2 cups cooked long grain rice

  5. Sounds amazing. My favorite is seafood chowder. I don’t really have a recipe. I basically just start with a roux and milk and clam juice to it. Then I just use whatever fresh seafood I can get. Usually a few shrimp cut up, shelled clams cut up. Stuff like that. And a hearty fillet that I’ve cut up. Plus sautéed fresh mushrooms in butter. Season to taste. Warm and filling. Oh don’t forget the potatoes I almost did.
