Bologna Pie: (Really—it’s delicious, and a favorite Italian Easter recipe)

Today I’m reposting one of my favorite Easter recipes.

Any ready-made pie crust will do.

Filling:

1 1/2 lb. ground bologna (ask at the meat counter of your favorite supermarket if they will grind the bologna—some won’t because then they have to clean their entire machine).
If you can’t find anyone, just grind or chop the bologna at home

parsley to taste

2 tablespoons grated Italian cheese and 1 beaten egg

Mix well and alternate in pie shell: 1 layer meat filling and 1 layer hard boiled eggs, sliced

Top with crust and bake 45 minutes at 325 degrees.
